Bread & Butter Pudding

P1140887AThis is my easy treat on my day-off work, although it looks dull and dark, but it does have very creamy and rich.

I decided to soak the raisin into rum and pour the rum into the liquid mixture. One thing I loved about bread and butter pudding is the beautiful crisp edges and a soft custardy middle, I think this is what every girl looks for in a bread and butter pudding. Enjoy it.

  • 3 eggs
  • 3 Tbsps caster sugar
  • 250ml full fat milk
  • 250ml double cream
  • 5 tbsps of rum
  • 1 loaf of white bread with the crust off  and cut into triangle shape
  • 50g butter
  • handful of raisin or sultanas
  1. Preheat the oven to 180°C / Gas mark 4
  2. Pour the rum into a bowl with the raisin and set aside or about 10 minutes.
  3. In a large bowl mix eggs, sugar, milk, cream, rum then set aside.
  4. If you only have fresh bread try make it “thirsty” by toast it in toaster and then butter it
  5. Arrange buttered bread slices in overlapping slices in the bottom of an ovenproof dish, leaving some edges sticking out at the top so that they crisp up. Scatter the soaked raisin over the top and then pour in the liquid mixture.
  6. Bake for 30 minutes in the preheated oven and serve warm with cream or custard.
